Cranberry Orange French Toast Bake

An easy and quick breakfast perfect for a family get together or holiday gathering!

Do you love french toast? I mean who doesn’t. Ok, I am sure there are a few people who don’t but let’s just pretend we all love it equally. What makes the french toast even better is being able to mix it all in one bowl and toss in the fridge for the next day. Awesome right?! Personally, anything that makes life a little easier, especially when my family is around is a huge plus for me. This recipe is quick and easy but adds a little twist on a classic with some holiday flavors. Obviously, you can make it any time of year and I would encourage you too because it is that good, but it is perfect for the upcoming holiday season.

The orange and cranberry takes this french toast up a notch and adds a ton of delicious flavor.  Plus, it’s made with flax milk so you can secretly sneak in some omega 3’s and no one will know you gave them something with some health benefits. I used the Manitoba Milling flax milk (affiliate link). It has a similar flavor to almond milk in my opinion. I also really love their smooth milled flaxseed (affiliate link), great for baking and adding to oatmeal or smoothies! I personally love to use the flax milk in smoothies as well as the flaxseed as an easy way to boost nutrition, but back to this french toast.

If you don’t love cranberries you could easily swap out for raisins or skip them altogether. I mean you really can’t go wrong with the simplicity of vanilla and cinnamon, but adding a twist with cranberry and orange is just so dreamy. The other great part of this recipe is you can choose whatever crusty bread you want. I chose a seedy whole grain, but sourdough or just a delicious french bread would be awesome as well. You can also substitute in whatever milk of choice you want. It is very customizable!

All you have to do is throw all the ingredients together and let it set in the fridge overnight soaking up all the goodness. You will wake up and it will be ready to go. I like to take it out of the fridge for 30 minutes or so before putting it in the oven. This would be a great time to enjoy a cup of coffee before the morning madness starts. You can enjoy this with just a dusting of powdered sugar or you can add a drizzle of syrup if you want a little more sweetness.

Cranberry Orange French Toast Bake

Ingredients
  • 1 loaf of crusty bread, french, grain or sourdough
  • 6 eggs
  • 2 cups flax milk
  • 1 medium orange, zest plus juice
  • 1 tsp vanilla
  • 1/3 cup dried cranberries
  • 1/2 tsp salt
  • 1/2 cup maple syrup
  • 1/4 cup coconut oil
  • 1/2 tsp cinnamon
Directions
  • Step 1 In a large mixing bowl mix together eggs, orange zest plus juice of orange, flax milk, vanilla, maple syrup, salt, and cinnamon.
  • Step 2 Cut up bread into 1-2 inch cubes. Place bread in egg and milk mixture and completely coat bread.
  • Step 3 Melt coconut oil and pour into the bottom of a 9×12 baking dish, pour bread mixture into plan. Place pan in the fridge overnight for at least 8 hours.
  • Step 4 Preheat the oven to 375F, in the meantime take the french toast bake out of the fridge for 30 minutes before placing in the oven.
  • Step 5 Bake for 45-50 minutes or until golden brown and set.
  • Step 6 Enjoy with a drizzle of maple syrup, whip cream or a dusting of powdered sugar.
