Almond Butter Chocolate Chip Cookies

Soft and chewy almond butter chocolate chip cookies, gluten free and so easy to make!

I have to confess I have a slight obsession with cookies, in particular chocolate chip cookies. I mean you really can’t go wrong, they are a classic treat, which is why I love any and all variations of cookies that include chocolate chips or just chocolate. It is chocolate so that doesn’t really need an explanation. Now, almond butter is another thing. It may not be everyone’s favorite, but makes these cookies and you may have a change of heart. It adds a delicious nutty taste and compliments the chocolate chips so well!

These almond butter chocolate chip cookies are a nod to a soft and chewy chocolate chip cookie. Seriously delicious and they are gluten free friendly if you happen to need it. I made a batch to share with my sister after she had her last baby. Needless to say they were gone within 2 days. She joked that she was on the cookie diet and I can get on board with that! I strongly believe you can enjoy dessert on a regular basis and still be a healthy individual, and let’s not forget happy. Cookies just make people happy, it’s a fact, or it should be.

These cookies are soft, delicious, sweet and chewy! I mean what is better than that? Nothing. At least not in my world. Although I will say I enjoy a variety of textures, including crispy or crunchy cookies, but there is a time and place for that. At this moment in time, it is all about the these soft and chewy cookies. Bake up a batch and share them with someone you love, because they are that good!

Almond Butter Chocolate Chip Cookies

Ingredients
  • 1 cup almond butter
  • 1 cup almond flour
  • 1 large egg
  • 1/3 cup honey
  • 1 teaspoon vanilla
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 cup dark chocolate or semi-sweet chocolate chips
Directions
  • Step 1 Preheat oven to 350F.
  • Step 2 Add almond butter, almond flour, honey, and 1 egg into a mixing bowl and incorporate.
  • Step 3 Next add in vanilla, sea salt, baking soda, and baking powder. Mix till incorporated.
  • Step 4 Lastly, fold in chocolate chips. Use a large tablespoon or cookie scoop to portion dough onto lined cookie sheet, make sure to space cookie dough evenly.
  • Step 5 Bake for 10 to 12 minutes or until lightly browned.
