Cinnamon Flax Crackers

These cinnamon flax crackers are a fun way to try something new and make a delicious snack!

When I had the opportunity to create a recipe featuring flaxseed I was all about it. Why? Flaxseed is one of those easy to add foods that adds some awesome benefits. What does it add exactly? For one it is a source of fiber, protein, and omega 3 fatty acids. Omega 3 fatty acids are a source of anti-inflammatory fats that most of our diets are missing. So what better way to enjoy them then in a lightly sweetened cracker?

Plus, cinnamon is such a delicious spice that adds a lot to a recipe and I love cinnamon. I have a few or a lot of recipes that include cinnamon, because why not? It also happens to be officially fall so cinnamon fits right in. I originally made this recipe back in early summer for a Manitoba Milling recipe contest. At the time I didn’t have my food blog up and operating, but now I do which happens to be perfect for the time of year.

To be fair though, these can be enjoyed year round, just check out the s’mores shot. I mean that makes them ideal for a summer BBQ or just to have a fun treat with your kids and they won’t know they are secretly good for them! They would also be a fun recipe to make in the kitchen with your little ones by having them mix them up, roll them out or creating their favorite shapes.

The combination of ground flaxseed in this recipe creates an almost toffee like texture, not quite as crunchy as a saltine cracker, but not soft like a cookie. Kind of somewhere in the middle if that makes sense. The texture plus the light sweet flavor makes them a delicious snack. They would be delicious paired with dessert hummus, if you haven’t tried dessert hummus you are missing out!

Cinnamon Flax Crackers

Ingredients
  • 1 cup smooth milled flaxseed
  • 2 cups almond flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1/4 cup brown sugar
  • 2 teaspoons cinnamon
  • 1/4 cup avocado oil or vegetable oil
  • 1/4 cup honey
  • 1 teaspoon vanilla
  • 2 tablespoons almond milk
Directions
  • Step 1 Place all ingredients in mixer or a bowl and combine. The mixture will be similar to pie dough, slight crumbly, but pressed together when rolled. Once mixed together place in fridge to chill for 15-20 minutes.
  • Step 2 Preheat oven to 300F and line a baking sheet with parchment paper.
  • Step 3 Roll dough out 1/8-1/4 inch thickness and cut into whatever shake you like. I used a round shape, but a pizza cutter and square crackers would work well too.
  • Step 4 Bake for 13-15 minutes or until lightly browned. Remove from baking sheet and let cool.
  • Step 5 Enjoy on their own and turn them into s’mores!
