Blueberry Orange Whole Wheat Muffins

 Who doesn’t love a classic blueberry muffin with a zesty twist? These blueberry orange whole wheat muffins a lightened up version of a breakfast classic and an easy recipe to add to your breakfast rotation!

I love blueberry muffins and muffins in general, although I rarely actually eat them. Why? I find most muffins to just be cupcakes, which is totally fine, I love a good cupcake. But when it comes to breakfast I prefer to go a little more savory, on occasion though a muffin just hits the spot.

These muffins sport whole wheat flour, healthy fats, and are lighter on the sugar, plus a hit of orange for a fun twist. If you aren’t sure if these are for you then ask yourself why not? Because these are seriously delicious, just ask my nephew. He thought they were so good and was bummed that he couldn’t have more!

They are easy to make and take just a few minutes to throw together before you are baking them, giving your house a delicious fresh baked smell! This recipe does call for orange juice concentrate, you know the frozen orange juice in the freezer aisle? You can take out the amount you need and then seal it up and throw it back in the freezer to use for the next time you make these muffins.

You can also defrost it and place it in a ice cube container. Let it freeze again and then put it into a zip-lock bag and you have orange juice cubes! I would suggest measuring it by tablespoons, like 1-2 tablespoons per cube so you know how much, and that way it is ready to go for recipes or a fun way to add some orange flavor to a punch bowl. I like to use a little when I make orange chicken! Adds a ton of flavor and you don’t need all that much.

This recipe does call for avocado oil, but you can use any oil you have. I just personally love avocado oil. It has a higher cooking temperature, neutral flavor and is loaded with healthy fats. I purchase mine from Costco, it tends to be the best price.

Ingredients
  • 1 1/2 cups whole wheat flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup brown sugar
  • 1 cup fresh or frozen blueberries
  • 1 egg
  • 1 cup buttermilk
  • 1 tsp vanilla
  • 1/3 cup avocado oil or vegetable oil
  • 2 tbsp orange juice concentrate
  • Zest of one orange
Directions
  • Step 1 Preheat oven to 350F and spray your muffin tin with cooking oil or use muffin liners. Set aside.
  • Step 2 Place whole wheat flour, baking powder, salt, and brown sugar into mixing bowl and mix together.
  • Step 3 Add egg, buttermilk, and avocado oil to dry mixture.
  • Step 4 Add orange juice concentrate, zest of orange, and vanilla mixture and incorporate.
  • Step 5 Lastly, mix in blueberries. If frozen they may bleed and color your batter.
  • Step 6 Fill muffin tin about 2/3 full.
  • Step 7 Place in oven at 350F and bake for 20-22 minutes or until toothpick comes out clean.
