Crunchy Peanut Butter and Chocolate Energy Bites

If you love a quick and easy snack then these crunchy peanut butter and chocolate energy bites are prefect, plus they are kid friendly!

I love peanut butter and chocolate so don’t be surprised if you notice a trend with recipes at some point featuring excessive amounts of peanut butter and chocolate! In my opinion its the classic combo that just keeps giving. Do you agree? If you say yes then let’s be friends and if not then let’s be friends because I won’t have to share my chocolate and peanut butter with you, so it’s a win win!

If you have a kid with allergies or maybe you aren’t a fan of peanut butter then you can sub out for a safer option, such as sunflower butter, almond butter, or a soy based alternative. Either way you really can’t screw them up, which is why I love making them. Quick, easy, and your kids can help make them. Take any of your favorite flavors and you have a pre-portioned snack or treat waiting for you.

Most energy bite recipes call for some kind of nut butter, generally smooth, but I decided to switch things up and use crunchy peanut butter. Feels like crunchy peanut butter is the black sheep of the family though, not many people seem to pay attention to it. To be honest I tend to opt for creamy/smooth 99% of the time. For me it is more out of habit, nothing against crunchy peanut butter, I just always grab smooth peanut butter.

The second part of this recipe that gives it a little crunch are those teeny tiny chia seeds. Now if you don’t like chia seeds you can omit them from this recipe, they are basically there as a nutritional boost adding extra fiber and some omega 3 fatty acids. You can also sub out for perhaps ground flaxseed. It is another great nutritional booster adding extra fiber and omega 3 fatty acids.

Crunchy Peanut Butter and Chocolate Energy Bites

Ingredients
  • 1 1/2 cups old fashioned oats, sub quick oats if needed
  • 1/2 cup crunchy peanut butter
  • 3 tbsp cocoa powder
  • 1/3 cup honey or maple syrup
  • 1/4 tsp sea salt
  • 1 tsp vanilla
  • 1/4 cup chia seeds
  • 1/4 cup mini chocolate chips
Directions
  • Step 1 Place all ingredients into a mixing bowl and combine.
  • Step 2 Using a tablespoon or a cookie scoop, portion out into individual balls, roll and place on parchment lined surface.
  • Step 3 Once done you can store in fridge or the freezer.
