These peanut butter s’mores bars are the ultimate easy tribute to a classic summer treat!
Who else feels like this summer basically flew by? To be honest summer isn’t my favorite season, but when it goes so fast I kind of miss it. Especially here in Montana where we have winter for basically half the year, which is why my favorite season is fall and it is almost here! But to get back to summer I feel like s’mores basically define summer. It’s the treat that we can all remember from our childhood, during camping trips or summer camps.
The best part is you can make it yours by using whatever chocolate you love and you don’t need fire. I personally think that is the best part about s’mores, making it your own with whatever you like. You can even skip the chocolate, but I don’t recommend it, because is it really a s’mores without chocolate? I am going to say no. I tend to go for a dark chocolate versus milk chocolate, I find milk chocolate to be a little to sweet. Saying that sounds weird because I generally never think anything is too sweet, anyone else like that?
The plus side with this recipe is that it does not require baking, just 30 seconds under the broiler. Otherwise the rest is super easy! Your kids can even help smash the graham crackers or you can skip the possible mess and use the food processor. Either way it is a quick and easy treat. The graham cracker layer adds a delicious peanut butter and crunchy layer that paired with dark chocolate and some toasted marshmallow make this a delicious treat for all.
If you aren’t a fan of dark chocolate then sub in milk chocolate or maybe try white chocolate. You can also get fancy and choose a chocolate that has nuts or toffee. Peanut Butter S'mores Bars
Ingredients
- 2 sleeves of graham crackers or 16 crackers crushed
- 1 cup peanut butter melted
- 1/2 cup powdered sugar
- 1 teaspoon vanilla
- 1/8 teaspoon salt
- 8 ounces dark chocolate melted
- 2 cups mini marshmallows
Directions
- Step 1 Place graham crackers in large zip-lock bag or the food processor and crush.
- Step 2 Melt 1 cup peanut butter and mix in crushed graham crackers, 1 teaspoon of vanilla and 1/8 teaspoon salt.
- Step 3 Place half the graham mixture into an 8X8 pan and press into the bottom until firm.
- Step 4 Melt 8 ounces of chocolate and pour half the chocolate onto layer of graham crackers, place in freezer or fridge for 5 minutes to set.
- Step 5 Pull out of the freezer and place second half of graham cracker mixture over the chocolate layer and press down to create a smooth layer.
- Step 6 Pour the other half of the melted chocolate over graham cracker layer and smooth evenly.
- Step 7 Sprinkle 2 cups of mini marshmallows over chocolate evenly and then place back in fridge or freezer for 5 minutes to set again.
- Step 8 Turn the broiler on high, once bars are set place the bars under the broiler for 30 seconds or until toasted to your likeness.
